Looking for a healthy post run or pre gym snack this festive season? Look no further then our figgy pudding energy bites. Packed full of coconut oil, nuts and dried fruits these provide the perfect healthy snack.

  • 120g dried figs
  • 120g Almonds
  • 50g raisins
  • 50g cranberries
  • 50g pecans
  • Zest and juice of an orange
  • 2 tbsp. coconut oil

Mix all the ingredients in a food processor until they are all stuck together. Pop the mixture in the fridge to harden a little before rolling into bite sized balls.

To make the topping soak 50g cashews in water overnight. Drain most of the water and pop in a food processor with remaining 1-2 tbsp. Add a little squirt of lemon juice and mix until the smoothness you prefer.

Pop a little cashew cream cheese on top and finish with a dried cranberry.
